11.11 does not build
Wine 11.11 [fails to build ][1]. Wine 11.0 builds, so use it for the time being. Probably, Wine 11.10 would build too. [1]: https://gitlab.winehq.org/wine/wine/-/merge_requests/11025#note_143135
