If there is a better way to get the full version with all underscores replace by dashes, please tell me.

Whats wrong with the two variants you used?

${PKGFULLVERSION//_/-}

and

${PKGVERSION}${PKGEXTRAVERSION_DASH}

I'd prefer the first one, because it only requires knowledge of bash and not knowledge of bee to understand what it is doing. But I know, opinions are parted over that.

${PKGFULLVERSION/_/-}

would do as well (replacing only the first _ if there is more than one).
