dt-bindings: i2c: renesas,i2c: Convert to json-schema

Convert the Renesas R-Car I2C Controller Device Tree binding
documentation to json-schema.

Document missing properties.
Make the clocks property required.
DMA is supported on R-Car Gen3 and RZ/G2 only.
Update the example to match reality.
