By default, Gnuplot on the Mac uses the ‘aqua’ terminal type. That’s OK as long as you don’t want to manipulate 3D graphics interactively (created with splot, for example). This simply doesn’t work. Instead, use the X Window System terminal type:

set term x11

This will allow for interactive graphics.
